Paleo Carrot Ginger Soup

This easy, warm Paleo soup can be made ahead and kept in the crockpot on low all day, you’ll come home to a nice hot bowl of deliciousness! This is one of my favorite Paleo fall soups!

Ingredients For Paleo Carrot Ginger Soup

1 Tbsp ghee (clarified butter) or butter

4 shallots, minced

2 Tbsp fresh ginger, peeled and grated

2 quarts chicken broth

2 cups coconut milk, optional

3 lbs carrots, grated

Salt and pepper to taste


Directions:

- Sauté shallots in ghee with salt and pepper

- Add remaining ingredients and cook until vegetables are soft

- Puree,  adding more broth or water if necessary

- Garnish with parsley
